SUKHIYAN / SUGIYAN

Sukhiyan is a traditional snack in Kerala, which is eaten as a snack or with breakfast. Many Keralites has a nostalgic memories of enjoying this snack with the family and friends.

It's a fritter food filled with green gram & jaggery, coated with all purpose flour batter. 

We are always confused about the name. It's called Sukhiyan & Sugiyan. I don't know how this sweet ball got this strange name. But after the first bite you will feel the heavenly nostalgic taste in your  mouth.




So let's start with the ingredients:


INGREDIENTS NEEDED FOR THIS EASY SNACK:


For filling:


  • Green gram -2 cups.

  • Jaggery - 1 block.

  • Grated coconut -1/2 cup.

  • Cardamom powder -1/4tsp

  • Salt - to taste.






For coating:

  • All purpose flour -1 cup.

  • Salt -as per taste

  • Turmeric - 1/4tsp

  • Water - as required.


For frying:

  • Cooking oil- to deep fry.




HOW TO MAKE SUGIYAN/SUKHIYAN:


  1. Wash & soak the green gram for about 3-4 hrs.

  2. Drain the water & put the green gram to a pressure cooker along with 2 cups of water, add a pinch of salt.

  3. After 2 whistles turn off the stove & wait till the pressure drops.

  4. Open the pressure cooker, if there is still extra water drain it off.

  5. Heat a pan, crush the jaggery and add it to the pan along with water.

  6. Let the water to boil completely.

  7. Now add grated coconut & cardamom powder.cook for about 2 mins.

  8. Add the green gram and mix it will to form a thick mixture.( personally i don't prefer the mushy kind of texture. So I normally add half portion of cooked green gram & later when the mix is starting to turn dry,I add the remaining portions.)

  9. Turn off the heat and wait it to cool down a little.

  10. During that time start making the batter.

  11. Mix all purpose flour, salt, turmeric (it gives the beautiful yellow color, if you want you can add) & water to make a thick batter.

  12. Now start making small lemon sized balls of green gram mixture with your hands.(if the mixture is too sticky you can grease your hands with ghee/oil).

  13. Pour enough oil into a deep bottom pan and heat it.

  14. When the oil is heated ,reduce it to medium flame (always keep it in medium flame).

  15. Dip the green gram mixture balls into the batter & deep fry them.

  16. Make sure sukhiyan/sugiyan is completely cooked on all sides (flip it carefully) &fry till golden brown.

  17. Remove from oil  and place it in a napkin.

  18. Serve it with tea & enjoy.
